Easy Slow Cooker Chicken Chili

Instructions

  1. Combine diced chicken, onion, bell pepper, garlic, drained beans, tomatoes, tomato sauce, corn, chili powder, cumin, oregano, salt, pepper, and bay leaf in a slow cooker and stir.

  2. Cook covered on high for 1 hour, then switch to low for 3-4 hours, or until chicken is tender; alternatively, cook on high for 3-4 hours.

  3. Discard the bay leaf.

  4. Serve with optional sour cream, shredded cheese, or fresh cilantro.
