Easy Skillet-Fried Potatoes

A quick side dish for breakfast, these skillet-fried potatoes with onions and peppers become golden brown in just 15 minutes of active cooking.

Instructions

  1. Heat 3 tablespoons oil in a large skillet over medium heat.

  2. Sauté 1 sliced onion until tender and translucent.

  3. Add 1 diced red bell pepper and 1 minced garlic clove; cook for 1 minute.

  4. Stir in 6 potatoes (1/2-inch pieces), 1 teaspoon paprika, 1/2 to 1 teaspoon salt, and black pepper.

  5. Cover and cook for 10-15 minutes until potatoes are tender.

  6. Uncover, increase heat to medium-high, and cook for 8-10 minutes, turning occasionally, until golden brown.

  7. Adjust seasoning as needed.
