Instructions

  1. Preheat the oven to 400 F and prepare a baking sheet.

  2. Whisk 1 egg with 1 tablespoon water for an egg wash; set aside.

  3. Combine flour, baking powder, sugar, and salt; cut in butter until the mixture resembles large crumbs.

  4. In a separate bowl, beat the remaining 2 eggs with cream; stir this mixture into the dry ingredients, then mix in the currants.

  5. Turn the dough onto a floured surface, press it together, adding more cream a tablespoon at a time if needed, and roll to 1-inch thickness.

  6. Cut the dough into desired shapes and arrange on the prepared baking sheet.

  7. Brush the scone tops with the egg wash and bake for 15 minutes, or until golden.
