Instructions
-
Start boiling 3 1/2 cups chicken stock in a medium pot with a tight-fitting lid over high heat.
-
While the stock heats, stir in 1/2 teaspoon turmeric, 1/2 teaspoon saffron threads, 1/4 to 1/2 teaspoon dried crushed chile (optional), and lemon or lime juice.
-
Add 2 cups white Thai jasmine rice and 1 1/2 tablespoons fish sauce (or 1/4 teaspoon salt), then stir and bring to a boil.
-
Reduce heat to low, cover tightly, and cook for 12 to 15 minutes until the liquid is absorbed.
-
Turn off the heat, keep the pot covered, and let it rest on the burner for 5 to 10 minutes, or until serving.
-
Before serving, fluff the rice with a fork or chopsticks. Taste and adjust seasoning with additional fish sauce or salt, or lemon juice if too salty.
