Easy Saffron Rice

Southern Thai saffron rice is an easy, flavorful stovetop dish made with jasmine rice.

Instructions

  1. Start boiling 3 1/2 cups chicken stock in a medium pot with a tight-fitting lid over high heat.

  2. While the stock heats, stir in 1/2 teaspoon turmeric, 1/2 teaspoon saffron threads, 1/4 to 1/2 teaspoon dried crushed chile (optional), and lemon or lime juice.

  3. Add 2 cups white Thai jasmine rice and 1 1/2 tablespoons fish sauce (or 1/4 teaspoon salt), then stir and bring to a boil.

  4. Reduce heat to low, cover tightly, and cook for 12 to 15 minutes until the liquid is absorbed.

  5. Turn off the heat, keep the pot covered, and let it rest on the burner for 5 to 10 minutes, or until serving.

  6. Before serving, fluff the rice with a fork or chopsticks. Taste and adjust seasoning with additional fish sauce or salt, or lemon juice if too salty.
