Instructions

  1. In a large bowl, combine the flour, baking powder, salt, and sugar.

  2. Add 1 tablespoon of oil, then gradually add water, starting with 3/4 cup, and knead until a soft, pliable dough forms in 4 to 8 minutes.

  3. Shape the dough into a ball, coat with remaining oil, cover, and let rest for 30 minutes.

  4. Heat a cast iron griddle or pan over medium heat.

  5. Divide the dough into 4 equal pieces, keeping unworked portions covered.

  6. On a lightly floured surface, roll each dough piece into a 5-inch circle, approximately 1/4 inch thick.

  7. Place a dough disc on the griddle over medium-low heat, cook until it puffs, then flip and cook the other side for 1 to 2 minutes.

  8. Remove from heat, wrap loosely in a towel, and repeat the process with the remaining dough. Serve warm.
