Easy Rolled Dumplings for Chicken and Dumplings

Instructions

  1. Simmer one cut-up chicken in 2 quarts of low-sodium chicken broth with desired seasonings for 1 hour. Remove chicken, cool, then debone and shred or chop the meat; set aside.

  2. In a food processor, combine flour, salt, egg, butter, and milk; mix until the dough clumps together.

  3. On a floured surface, roll the dough to 1/8-inch thickness and cut into squares or diamonds.

  4. Bring the reserved chicken broth to a boil. Drop the dough pieces into the boiling broth and cook for 10 minutes.

  5. Return the chopped chicken to the broth, heat thoroughly, and serve.
