Easy Roasted Rutabaga

Instructions

  1. Preheat the oven to 425 F and line a large baking sheet with foil.

  2. Peel rutabaga and cut into 1-inch pieces.

  3. Toss the diced rutabaga with olive oil, salt, pepper, and optional nutmeg.

  4. Arrange the rutabaga in a single layer on the prepared sheet.

  5. Bake for 40 to 50 minutes until tender and lightly browned.

  6. Optionally toss with fresh chopped parsley before serving.
