Easy Rib Eye Roast

Instructions

Preheat the oven to 500 F with a large cast iron skillet inside; heat the skillet for 15 minutes once the oven reaches temperature. Meanwhile, combine pepper, salt, and garlic in a bowl.

Rub the spice mixture all over the roast, trussing if needed for even cooking.

Carefully remove the hot skillet, place the roast fat side up in it, then return to the oven and roast for 25 minutes.

Reduce oven heat to 325 F and continue cooking for 1 to 1.5 hours until the internal temperature reaches 115-120 F for medium-rare, or 125-130 F for medium.

Remove the roast, tent with foil, and let it rest for 20 minutes; note that the temperature will rise 5-10 degrees during this time.
