Easy Red Lentil and Tomato Soup

Instructions

  1. In a large pot, bring washed lentils and stock to a boil; cook uncovered for 10 minutes, then cover, reduce heat, and simmer for 15 minutes.

  2. Transfer cooked lentils, stock, tomatoes (with juice), and fresh herbs to a food processor; blend until smooth.

  3. Return the blended soup to the pot and simmer to achieve desired thickness.

  4. Season with salt and pepper to taste, then serve, optionally drizzled with cream.
