Easy Red Lentil and Tomato Soup

In a large pot, bring washed lentils and stock to a boil; cook uncovered for 10 minutes, then cover, reduce heat, and simmer for 15 minutes.

Transfer cooked lentils, stock, tomatoes (with juice), and fresh herbs to a food processor; blend until smooth.

Return the blended soup to the pot and simmer to achieve desired thickness.

Season with salt and pepper to taste, then serve, optionally drizzled with cream.
