Easy Recipe for Turkish Flour 'Helva'

Instructions

  1. Combine sugar, milk, and water in a saucepan; bring to a boil, stirring until sugar dissolves, then remove from heat and stir in optional flavorings.

  2. In a separate large, shallow pan, melt butter; add flour when bubbly and work it through with a wooden spoon.

  3. Reduce heat to low and continuously stir the flour mixture for at least 15 minutes until golden brown with a toasted aroma.

  4. Turn off heat, then add the hot milk and sugar mixture, stirring continuously as it bubbles and cools until the helva forms a soft, firm, and shiny ball.

  5. While hot, shape the helva into individual portions or press into a serving dish; cut into squares once cool.

  6. Toast pine nuts in a small nonstick pan over high heat, then garnish the shaped helva.
