Instructions

  1. In a bowl, combine 2 teaspoons each of ground ginger, cardamom, and mace; 1 teaspoon each of ground cinnamon, allspice, coriander, nutmeg, and turmeric; and 1/2 teaspoon each of freshly ground black pepper, ground white pepper, cayenne pepper, and anise seed, along with 1/4 teaspoon ground cloves. Stir thoroughly.

  2. Transfer the spice mixture to a glass jar and store it in a cool, dry place away from heat and sunlight for up to six months.
