Easy Pumpkin Muffins

Instructions

Preheat oven to 375 F and prepare a muffin tin by spraying with cooking spray or lightly spraying cupcake liners.

In a large bowl, whisk together pumpkin puree, oil, eggs, granulated sugar, brown sugar, salt, baking soda, baking powder, and pumpkin pie spice until combined.

Fold in all-purpose flour until only a few streaks remain.

Stir in milk until fully incorporated, then mix in optional add-ins if desired.

Scoop approximately 1/3 cup of batter into each muffin liner, filling almost to the top.

Bake for 20 to 25 minutes, or until muffin tops spring back and a skewer inserted comes out with a few crumbs.

Cool muffins in the tin for 5 minutes, then transfer to a cooling rack to cool completely.
