Easy Provencal Fish

Instructions

  1. Heat oil in a saute pan over medium-low heat. Add bell peppers, onions, and whole garlic cloves, cooking until vegetables are tender, about 5 minutes.

  2. Stir in crushed tomatoes, olives, and seasoning; cook for 5 minutes until garlic cloves are tender, adding 1 tablespoon of water at a time if the mixture becomes dry.

  3. Increase heat to medium, then add cod fillets to the pan and spoon the sauce over them. Saute for 5 to 7 minutes until the cod is cooked through and flakes easily.

  4. Season to taste with salt and pepper, then serve the cod fillets topped with the Provencal sauce.
