Easy Potato Bread

Instructions

  1. Preheat the oven to 375 F.

  2. Combine mashed potatoes, beaten eggs, and softened butter in a large bowl.

  3. Stir in sugar, salt, yeast, and warm water.

  4. Gradually mix in flour, one cup at a time, until the dough can be kneaded by hand.

  5. Knead the dough on a floured surface until smooth and elastic.

  6. Place the dough in a greased bowl, flip to coat, cover, and let rise for 1 to 2 hours until doubled.

  7. Punch down the dough.

  8. Fold the edges to form a ball, then briefly knead out air bubbles on a lightly floured surface.

  9. Divide the dough into two equal portions and shape them into loaves.

  10. Place each loaf in a greased 8x4x2-inch bread pan, cover, and let rise a second time for 40 minutes until doubled.

  11. Bake for 40 minutes or until the bread sounds hollow when tapped.

  12. Remove loaves from pans and cool on a rack.
