Easy Potato Bread
A flavorful and moist potato bread recipe utilizing fresh or instant mashed potatoes, yielding two loaves with an excellent crumb.

Instructions

Preheat the oven to 375 F.

Combine mashed potatoes, beaten eggs, and softened butter in a large bowl.

Stir in sugar, salt, yeast, and warm water.

Gradually mix in flour, one cup at a time, until the dough can be kneaded by hand.

Knead the dough on a floured surface until smooth and elastic.

Place the dough in a greased bowl, flip to coat, cover, and let rise for 1 to 2 hours until doubled.

Punch down the dough.

Fold the edges to form a ball, then briefly knead out air bubbles on a lightly floured surface.

Divide the dough into two equal portions and shape them into loaves.

Place each loaf in a greased 8x4x2-inch bread pan, cover, and let rise a second time for 40 minutes until doubled.

Bake for 40 minutes or until the bread sounds hollow when tapped.

Remove loaves from pans and cool on a rack.
