Easy Pizza Pockets

Homemade pizza pockets, filled with sauce, cheese, and your preferred toppings, offer a simple and delicious option for lunch or a snack.

Instructions

  1. Preheat oven to 350 F and prepare a baking sheet with parchment or cooking spray.

  2. In a small saucepan, combine garlic, kosher salt, tomato paste, tomato sauce, black pepper, oregano, and olive oil. Bring to a simmer, then cook on low, stirring, for 3 minutes. Cool the sauce.

  3. On a floured surface, roll each biscuit to a 6-inch diameter.

  4. Spread 2-3 teaspoons of sauce on each round, then top with desired ingredients and 1 tablespoon of cheese.

  5. Moisten biscuit edges with water, fold over, and press to seal. Prick each pocket with a fork and place on the prepared baking sheet.

  6. Bake for 14-16 minutes until nicely browned.

  7. Meanwhile, warm any remaining pizza sauce.

  8. Optionally, brush baked pockets with olive oil, sprinkle with Parmesan, and serve hot with warm sauce on the side.
