Easy Pineapple Casserole

Instructions

  1. Preheat the oven to 350 F and place a rack in the center.

  2. Strain both cans of pineapple, reserving 1/3 cup of the juice.

  3. In a large bowl, whisk flour, sugar, and the reserved pineapple juice until smooth; then stir in the pineapple pieces and shredded cheese.

  4. Spoon the pineapple mixture into an 8-inch square baking dish.

  5. Combine cracker crumbs and melted butter in a medium bowl, tossing to coat, then sprinkle evenly over the pineapple mixture.

  6. Bake for 25 to 30 minutes, until the topping is golden brown.
