Easy Pierogi Casserole

Instructions

  1. Preheat oven to 350 degrees. Soak noodles in warm water for 30 minutes.

  2. Boil salted potatoes until tender; drain, mash, and mix with Cheddar cheese, 1/4 teaspoon salt, 1/4 teaspoon onion salt, and pepper.

  3. Separately, combine cottage cheese, egg, and 1/4 teaspoon onion salt.

  4. Lightly spray a 9x13 inch pan. Layer 3 drained noodles, then spread the cottage cheese mixture, followed by another 3 noodles.

  5. Spread the mashed potato mixture, then add 3 more noodles.

  6. Spread 1/2 cup caramelized onions, then top with the final 3 noodles.

  7. Mix the remaining 1/2 cup onions with bread crumbs and spread over the top.

  8. Cover with foil and bake on a pan for 30 minutes, or until bubbly.

  9. Uncover and bake for 5 more minutes. Let stand 10 minutes before serving with sour cream and dill, if desired.

  10. To make ahead: Prepare but do not bake. Cover with plastic wrap, then foil. Refrigerate for up to 24 hours (bake 40 minutes) or freeze for up to 2 months (bake 1.5 hours) after removing plastic wrap.
