Easy Pasta Salad With Fresh Herbs, Lemon and Garlic

Instructions

  1. Start boiling water for pasta. Cook pasta according to package directions, then drain and cool.

  2. In a skillet, heat 2 tablespoons olive oil over medium heat and sauté minced garlic for 1-2 minutes.

  3. Reduce heat to low, stir in chopped basil and parsley for 1 minute until warmed, then remove from heat and cool.

  4. Combine cooled pasta, cooled garlic-herb mixture, remaining olive oil, lemon juice, pine nuts, and Parmesan cheese in a large bowl.

  5. Season with salt and pepper.

  6. Toss well and serve cold, or chill for 1-2 hours for enhanced flavor.
