Easy Parisian Potatoes

Parisian potatoes are small, crispy potato spheres, prepared by scooping raw potatoes with a melon baller and baking them in butter or duck fat until golden.

Instructions

  1. Preheat the oven to 425 F.

  2. Scoop potato rounds using a melon baller and place them in a large saucepan with cold, salted water. Bring to a boil and cook for 4 minutes, then drain thoroughly.

  3. Melt oil, butter, or duck fat in a large ovenproof skillet over medium-low heat.

  4. Add blanched potato rounds, toss to coat, and season with salt and pepper. Roast in the oven for 25-30 minutes, stirring occasionally, until golden brown.

  5. Serve immediately.
