Instructions

  1. Preheat an electric griddle to 300 F or a stovetop griddle to medium-high heat, then spray with cooking spray.

  2. Combine 1 1/2 cups flour, 1 tablespoon baking powder, 1 tablespoon sugar, and 1/2 teaspoon salt in a large mixing bowl.

  3. Add 2 teaspoons melted unsalted butter, 1/2 teaspoon vanilla extract, 1 1/4 cups milk, and 1 large egg to the dry ingredients.

  4. Mix on low with an electric mixer until well combined, scraping down the bowl sides.

  5. Pour half a ladle of batter onto the griddle, leaving ample space between pancakes.

  6. Flip pancakes when small bubbles cover the surface, then cook for an additional 30 to 45 seconds.

  7. Remove cooked pancakes from the griddle and serve with desired toppings.
