Preheat an electric griddle to 300 F or a stovetop griddle to medium-high heat, then spray with cooking spray.

Combine 1 1/2 cups flour, 1 tablespoon baking powder, 1 tablespoon sugar, and 1/2 teaspoon salt in a large mixing bowl.

Add 2 teaspoons melted unsalted butter, 1/2 teaspoon vanilla extract, 1 1/4 cups milk, and 1 large egg to the dry ingredients.

Mix on low with an electric mixer until well combined, scraping down the bowl sides.
