Easy Pad Thai

Instructions

  1. Start boiling a large pot of water.

  2. Combine chicken stock, rice vinegar, lime juice, brown sugar, fish sauce, 1 tablespoon soy sauce, and cayenne pepper, stirring to dissolve sugar.

  3. Toss chopped chicken with 1 1/2 tablespoons soy sauce.

  4. Cook rice noodles in boiling water for approximately 6 minutes, then drain and rinse with cold water.

  5. Heat a wok or large frying pan over medium-high heat with oil. Stir-fry garlic, chili, and galangal or ginger for 1 minute.

  6. Add chicken and stir-fry 2 minutes. Add shrimp and continue stir-frying until pink and chicken is opaque, 2 to 3 minutes.

  7. If the pan becomes dry, add 1 to 2 tablespoons of the prepared sauce.

  8. Push ingredients to the side, crack an egg into the empty space (add oil if dry), and quickly scramble.

  9. Add the drained noodles and 3 to 4 tablespoons of the sauce. Lift and turn the noodles with the other ingredients, adding more sauce every minute or two until all sauce is incorporated and noodles are chewy and sticky, 8 to 10 minutes.

  10. Fold in bean sprouts and green onion. Remove from heat, adjust seasoning with more fish sauce or lime. Portion onto plates, adding a lime wedge and chopped peanuts.
