Easy One-Rise Sour Cream Nut Roll
A classic Balkan nut roll, featuring a sour cream yeast dough that requires only a single rise, results in a rich European-style dessert.

Start by preheating the oven to 350 F.

For the filling, combine walnuts, milk, 1.5 cups sugar, 1 egg, and 4 ounces butter in a nonstick saucepan; bring to a boil, then simmer over medium-low heat, stirring until thick, and cool completely.

For the dough, boil sour cream in a large saucepan, then remove from heat and stir in 3 tablespoons butter, 5 tablespoons sugar, baking soda, and salt; cool to 120-130 F.

Whisk flour and yeast in a large bowl, then add eggs to the cooled sour cream mixture and combine with the flour-yeast mixture.

Mix the sticky dough, then knead lightly on a floured surface to form a smooth ball, and let stand covered for 5 minutes.

Divide the dough in half; roll each piece to a 1/4-inch-thick rectangle and spread with half of the cooled filling.

Flip the dough sides in, then roll from the bottom up; place rolls on a parchment-lined sheet pan or greased loaf pans.

Cover with greased plastic and let rise for 1 to 1.5 hours until light.

Bake for 35 minutes; cool in pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
