Easy Northumberland Pan Haggerty

Instructions

  1. Preheat the oven to 375 F/190 C.

  2. Melt 1 ounce (2 tablespoons) butter in a large frying pan over medium heat; cook sliced onions until soft but not browned, then set aside.

  3. Melt 1 1/2 ounces (3 tablespoons) butter in an ovenproof pan. Remove from heat.

  4. Layer potatoes, onions, and cheese in the pan. Season with salt and pepper. Repeat layers, finishing with potatoes.

  5. Cook over medium stovetop heat until the bottom potatoes brown.

  6. Dot the top with remaining butter. Bake in the preheated oven for 30 minutes, then remove.

  7. Increase oven temperature to 425 F/220 C. Return pan to oven and bake for 15 minutes.

  8. Loosen edges with a spatula. Quickly flip onto a plate or cutting board. Cut into wedges and serve.
