Easy No-Bake Pineapple Cheesecake

Instructions

  1. Combine 1/2 cup graham cracker crumbs, 2 teaspoons granulated sugar, and 2 tablespoons melted unsalted butter. Reserve 2 tablespoons of the mixture, then press the remaining crumbs into an 8- to 9-inch springform pan and chill.

  2. Beat 8 ounces cream cheese with 1/2 cup sifted confectioners' sugar in a large bowl until fluffy.

  3. Add 20 ounces crushed pineapple to the cream cheese mixture and blend well.

  4. Fold 16 ounces whipped topping into the pineapple mixture.

  5. Spread the filling over the chilled crust, sprinkle with the reserved graham cracker crumbs, and chill for at least 2 to 3 hours before serving.
