Easy Marmalade Steamed Sponge Pudding

Instructions

  1. Start boiling water in a large saucepan for steaming.

  2. Butter a 1.2-liter pudding basin.

  3. Combine 1 tablespoon marmalade with golden syrup and orange zest, then spread into the basin's bottom.

  4. Cream butter and sugar until soft, then gradually beat in eggs.

  5. Sift in flour and baking powder, then fold alternately with milk and the remaining marmalade until smooth. Spoon the mixture into the basin.

  6. Cover the basin with pleated buttered greaseproof paper, then pleated foil, securing tightly with string.

  7. Place the basin on a trivet in the large saucepan. Pour boiling water halfway up the basin's side, cover, and steam for 1 1/2 hours, refilling water as needed.

  8. Unwrap and check doneness with a skewer; it should come out clean. Unmould onto a warm plate and serve with cream or custard.
