Instructions
-
Blend all mango sauce ingredients until smooth; adjust for desired sweetness, sourness, or saltiness, then set aside.
-
Toss chicken with soy sauce to marinate. Cut 1/2 to 1 mango into bite-sized cubes. Slice green onions, separating white and green parts.
-
Heat oil in a wok or large frying pan over medium-high heat. Stir-fry galangal/ginger and white green onion parts for 1 minute.
-
Add marinated chicken and stir-fry 2 to 3 minutes until opaque; add sherry/mirin if the pan dries out.
-
Incorporate red pepper and mango sauce (2 tablespoons at a time if pan dries) and continue to stir-fry for 3 minutes until chicken is cooked through.
-
Add remaining sauce, stir, and simmer for 1 minute. Stir in fresh mango cubes, then remove from heat to preserve mango flavor.
-
Taste and adjust seasoning with fish sauce, chile, or lime juice. Garnish with green onion tops and slivered almonds, then serve with rice.
