Easy Mango Chicken Stir-Fry

Instructions

  1. Blend all mango sauce ingredients until smooth; adjust for desired sweetness, sourness, or saltiness, then set aside.

  2. Toss chicken with soy sauce to marinate. Cut 1/2 to 1 mango into bite-sized cubes. Slice green onions, separating white and green parts.

  3. Heat oil in a wok or large frying pan over medium-high heat. Stir-fry galangal/ginger and white green onion parts for 1 minute.

  4. Add marinated chicken and stir-fry 2 to 3 minutes until opaque; add sherry/mirin if the pan dries out.

  5. Incorporate red pepper and mango sauce (2 tablespoons at a time if pan dries) and continue to stir-fry for 3 minutes until chicken is cooked through.

  6. Add remaining sauce, stir, and simmer for 1 minute. Stir in fresh mango cubes, then remove from heat to preserve mango flavor.

  7. Taste and adjust seasoning with fish sauce, chile, or lime juice. Garnish with green onion tops and slivered almonds, then serve with rice.
