Easy Lemonade Cookies

Instructions

  1. Preheat oven to 400 F.

  2. Cream butter and sugar until light, then beat in eggs until fluffy.

  3. Combine flour and baking soda; gradually add to the creamed mixture, alternating with 1/2 cup lemonade concentrate.

  4. Stir in grated lemon peel, if desired.

  5. Drop dough by teaspoonfuls, 2 inches apart, onto ungreased baking sheets.

  6. Bake for 8 minutes or until edges are lightly browned.

  7. Transfer cookies to racks to cool completely.

  8. Brush hot cookies with remaining lemonade concentrate and sprinkle with granulated sugar.
