Instructions

  1. Start boiling the water and sugar in a saucepan over medium-high heat, stirring until the sugar fully dissolves within 3 to 5 minutes.

  2. Remove the saucepan from heat and cool the syrup completely, stirring occasionally; use an ice bath if desired to expedite cooling.

  3. Stir the lemon zest and juice into the cooled syrup.

  4. Pour the mixture into a nonreactive container, cover, and refrigerate for at least 2 hours.

  5. Process the chilled mixture using an ice-cream machine, then serve immediately or freeze for an hour or more for a firmer consistency.
