Easy Lemon Pudding Cake From a Mix

Instructions

  1. Preheat the oven to 350 F and grease a 10-inch tube pan with cooking spray.

  2. In a bowl, beat eggs until thick, then add cake mix, pudding mix, water, and oil; beat at medium speed for 5 minutes.

  3. Pour the batter into the prepared pan.

  4. Bake for 50 minutes, or until a wooden pick inserted into the center comes out clean, then cool the cake in the pan on a wire rack for 15 minutes.

  5. Combine lemon juice and sifted powdered sugar in a saucepan, then bring to a boil while stirring constantly.

  6. Remove the cake from the pan, place it on a plate, and prick several holes across the top with a fork.

  7. Drizzle the hot glaze over the top and spread it onto the sides of the cake.
