Easy Lemon Curd Bars

Instructions

Preheat oven to 350°F. Coat an 8x8 inch baking pan with non-stick spray.

Cream butter and sugar until fluffy. In a separate bowl, combine flour, baking soda, and salt. Gradually mix the dry ingredients into the creamed butter mixture.

Reserve 1/2 cup of the dough for topping. Press the remaining dough into the prepared pan.

Bake the crust for 10 minutes, until the edges are lightly browned.

Cool crust on a wire rack for 10 minutes.

Spoon lemon curd evenly over the cooled crust.

In a small bowl, combine coconut, almonds, and the reserved dough mixture. Sprinkle this over the lemon curd.

Bake for 15 minutes, until the topping is golden brown.
