Instructions

  1. Preheat oven to 350°F. Coat an 8x8 inch baking pan with non-stick spray.

  2. Cream butter and sugar until fluffy. In a separate bowl, combine flour, baking soda, and salt. Gradually mix the dry ingredients into the creamed butter mixture.

  3. Reserve 1/2 cup of the dough for topping. Press the remaining dough into the prepared pan.

  4. Bake the crust for 10 minutes, until the edges are lightly browned.

  5. Cool crust on a wire rack for 10 minutes.

  6. Spoon lemon curd evenly over the cooled crust.

  7. In a small bowl, combine coconut, almonds, and the reserved dough mixture. Sprinkle this over the lemon curd.

  8. Bake for 15 minutes, until the topping is golden brown.

  9. Cool completely on a wire rack.

  10. Dust with powdered sugar if desired, then cut into bars to serve.
