Instructions

  1. Slice 4 pounds pork shoulder into 3 or 4 large chunks.

  2. Heat 1 tablespoon vegetable oil in the Instant Pot on sauté mode, then brown pork pieces for 8 to 10 minutes, turning to sear all sides.

  3. Add 1 quartered onion, 6 finely chopped garlic cloves, 1 teaspoon kosher salt, 1/2 teaspoon freshly ground pepper, and 1 cup chicken stock.

  4. Secure the lid, set the vent to seal, and pressure cook on high for 60 minutes, followed by a 10 to 20 minute natural pressure release.

  5. Remove the pork, strain the cooking liquid, skim off fat, return the defatted liquid to the Instant Pot, and adjust seasonings.

  6. Shred the pork, return it to the pot, and sauté until heated through.

  7. Serve the pork hot in buns or taco shells with desired garnishes.
