Easy Indian Gravy

Instructions

  1. Grind onion and tomato into a smooth paste, adding minimal water if needed.

  2. Heat cooking oil in a medium pan over medium heat, then add the prepared paste and fry for 5 minutes.

  3. Stir in garlic and ginger pastes and fry for 2 additional minutes.

  4. Incorporate powdered spices and continue frying until the oil separates from the masala.

  5. Turn off heat; for storage, cool completely and freeze in a labeled, airtight container.
