Easy Indian Gravy
A versatile Indian gravy base provides a foundation for many dishes and can be prepared in advance for later use.

Instructions

Grind onion and tomato into a smooth paste, adding minimal water if needed.

Heat cooking oil in a medium pan over medium heat, then add the prepared paste and fry for 5 minutes.

Stir in garlic and ginger pastes and fry for 2 additional minutes.

Incorporate powdered spices and continue frying until the oil separates from the masala.

Turn off heat; for storage, cool completely and freeze in a labeled, airtight container.
