Easy Hungarian Goulash
A traditional Hungarian beef stew features a rich paprika-infused flavor, creamy sour cream, and is served over buttered noodles for a comforting meal.

Instructions

Season beef chunks with salt and pepper, then toss with flour.

Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat.

Brown beef chunks in batches, then remove to a bowl.

Reduce heat to medium-low; add remaining 2 tablespoons olive oil, onions, mushrooms, and garlic to the Dutch oven, tossing to coat.

Cover and sweat vegetables for about 10 minutes until limp, stirring occasionally.

Stir in red wine and cook for 2 minutes, scraping the bottom.

Add beef broth, roasted red peppers, and paprika.

Return beef and its juices to the pan and stir.

Cover, reduce heat, and simmer for 1.5 to 2 hours until beef is fork-tender, stirring occasionally.

Remove from heat; stir in sour cream and adjust salt to taste.

Serve over hot buttered noodles, garnished with chopped parsley.
