Toast whole spices in a dry pan over medium-high heat for 1 minute, then reduce to medium and continue stirring for 6-10 minutes until fragrant.

Transfer toasted spices to a bowl and allow them to cool completely.

Prepare a clean grinder, ensuring any residue is removed if using a coffee grinder.

Grind the cooled, toasted spices until a fine powder is achieved.

Alternatively, if using ground spices, mix all (excluding bay leaf) and toast in a pan over medium heat for several minutes until fragrant.

When cooking with this curry powder, add 1-2 bay leaves directly to the curry pot.
