Easy Homemade Mayonnaise

A quick homemade mayonnaise offers a superior dressing for seafood and steamed vegetables, doubles as a sandwich spread, and serves as an excellent base for salad dressings.

Instructions

  1. Whip egg yolks for 1 to 2 minutes until thoroughly beaten.

  2. Add 1 teaspoon vinegar and whisk for 30 seconds; then add mustard, salt, and Tabasco, beating for another 30 seconds.

  3. With the mixer running, slowly drizzle in the oil, drop by drop, until an emulsion begins to form.

  4. Gradually increase the oil stream to moderate, continuing to mix.

  5. As the mixture thickens, periodically add more vinegar while continuing to pour in oil, until desired consistency is achieved.

  6. Slowly pour in the lemon juice.

  7. Use as a spread or in dressings.
