Instructions

  1. Preheat oven to 450 F with a rack in the center.

  2. In a large bowl, combine flour, baking powder, and salt.

  3. Cut in shortening until the mixture forms coarse crumbs.

  4. Pour in milk and stir with a fork until the dough just clings together and remains slightly lumpy.

  5. Lightly flour a surface and briefly knead the dough to combine.

  6. Roll or pat dough to 1/2-inch thick.

  7. Cut 2 1/2-inch rounds with a floured cutter, pressing straight down; reroll scraps once for additional biscuits.

  8. Arrange biscuits evenly on an ungreased baking sheet.

  9. Bake for approximately 12 minutes, until risen and golden brown.
