Preheat oven to 450 F with a rack in the center.

In a large bowl, combine flour, baking powder, and salt.

Cut in shortening until the mixture forms coarse crumbs.

Pour in milk and stir with a fork until the dough just clings together and remains slightly lumpy.

Lightly flour a surface and briefly knead the dough to combine.

Roll or pat dough to 1/2-inch thick.

Cut 2 1/2-inch rounds with a floured cutter, pressing straight down; reroll scraps once for additional biscuits.

Arrange biscuits evenly on an ungreased baking sheet.
