Instructions

  1. Combine 1 1/2 cups blanched almonds and 1/2 cup confectioners' sugar in a food processor, then process until very finely ground, scraping the bowl as needed.

  2. Add the remaining 1 cup confectioners' sugar and pulse until fully incorporated.

  3. Incorporate 1 large lightly beaten egg white and 1/2 teaspoon almond extract (if desired), then process until the mixture forms a cohesive clump.

  4. If the paste is sticky, add confectioners' sugar spoonful by spoonful until smooth.

  5. Use immediately or shape into a log, wrap in plastic, and store in a sealed bag in the refrigerator or freezer.
