Instructions

  1. Preheat the oven to 350 F (180 C) and lightly butter a 2 1/2 to 3-quart baking dish.

  2. Peel and dice 5-6 cups of potatoes into 1/2-inch pieces; cover with water in a saucepan, bring to a boil, then cook for 4-5 minutes until tender and drain.

  3. In a large skillet over medium heat, cook ground beef and chopped onions in vegetable oil until onions are tender and beef is no longer pink, incorporating mushrooms if desired; drain excess fat and season.

  4. Transfer the beef mixture to the prepared casserole dish, then layer with diced potatoes, seasoned with salt and pepper, and top with shredded carrots.

  5. Whisk together soup, sour cream, and milk, then spoon evenly over the casserole layers.

  6. Cover tightly with foil and bake for 50 minutes, or until vegetables are tender.

  7. Remove foil, sprinkle with shredded cheese, and bake for an additional 5-10 minutes until the cheese is melted.
