Easy Grilled Skirt Steak Fajitas

Instructions

  1. Prepare a high (500-600 F) grill.

  2. Trim skirt steak, cut into large pieces if needed, and sprinkle with 1 teaspoon salt.

  3. Mash minced garlic with 1 teaspoon salt to create a paste.

  4. In a heavy-duty freezer bag, combine garlic paste, lime juice, oil, Worcestershire sauce, cumin, and chili powder.

  5. Add steak, peppers, onion, and cilantro to the bag; squeeze air out and turn to coat.

  6. Refrigerate and marinate for 2 to 4 hours.

  7. Remove steak from marinade, reserving the marinade with the vegetables.

  8. Heat a large, heavy-duty skillet to its smoking point.

  9. Drain and dry vegetables; sauté in the skillet until crisp-tender, then season with salt and set aside.

  10. Grill the skirt steak for about 2 minutes per side, until medium-rare.

  11. Slice the cooked meat into thin strips against the grain.

  12. Serve immediately with warm tortillas, seared vegetables, and desired toppings.
