Easy Gluten-Free Split Pea & Ham Soup

A savory, gluten-free split pea soup, loaded with ham and vegetables, is also easily adaptable for a vegetarian meal.

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat; cook diced onion until translucent, about 3 minutes.

  2. Stir in dried green split peas, diced carrots, potatoes, ham, bay leaves, and 5 cups of water.

  3. Bring the mixture to a boil, then reduce to a simmer. Cook, stirring frequently, for 35 to 45 minutes until peas soften and the soup thickens. Add more water if a thinner consistency is preferred.

  4. Remove bay leaves and ham bone.

  5. Serve soup with gluten-free bread or a preferred side, garnished as desired.
