Instructions

  1. Preheat the oven to 350 F.

  2. Drain sliced peaches, reserving 1 cup of syrup.

  3. Combine drained peaches, cornstarch, cinnamon, and nutmeg in a medium bowl; stir in 3/4 cup of the reserved syrup, saving 1/4 cup for the batter.

  4. Pour the peach mixture into an 11 x 7-inch baking dish.

  5. In a separate bowl, whisk together sugar, gluten-free flour, gluten-free baking powder, and salt.

  6. Add the remaining 1/4 cup syrup, egg, melted butter, milk, and vanilla; beat until well mixed.

  7. Drop even spoonfuls of batter over the peach filling.

  8. Drizzle melted butter over the batter.

  9. Mix sugar and cinnamon in a small dish, then sprinkle over the cobbler.

  10. Bake for 35 to 40 minutes until golden brown.
