Instructions
-
Preheat the oven to 400 F (204 C).
-
In a small skillet, sauté 1 medium onion and 1/4 cup green bell pepper in 1 tablespoon vegetable oil over medium heat for 3 minutes until softened, then transfer to a large mixing bowl.
-
To the bowl, add 2 pounds ground beef, 2 large eggs, 1 1/2 to 2 cups gluten-free breadcrumbs, 2 teaspoons gluten-free Worcestershire sauce, 1/2 cup ketchup, 1 teaspoon fine salt, and 1/2 teaspoon ground black pepper.
-
Thoroughly blend the mixture with your hands, adding up to 1/2 cup more breadcrumbs if the mixture is too wet.
-
Scoop the meat mixture into a 9x5x3-inch loaf pan, pressing down and smoothing the top.
-
Bake for 30 minutes, then carefully remove the pan and pour off any excess fat.
-
Spread the remaining 1/2 cup ketchup over the loaf, then return it to the oven.
-
Bake for an additional 30 to 40 minutes, or until the internal temperature reaches 145 to 150 F.
-
Remove the meatloaf and let it rest for 10 minutes before slicing.
