Easy Gluten-Free Meatloaf

Instructions

  1. Preheat the oven to 400 F (204 C).

  2. In a small skillet, sauté 1 medium onion and 1/4 cup green bell pepper in 1 tablespoon vegetable oil over medium heat for 3 minutes until softened, then transfer to a large mixing bowl.

  3. To the bowl, add 2 pounds ground beef, 2 large eggs, 1 1/2 to 2 cups gluten-free breadcrumbs, 2 teaspoons gluten-free Worcestershire sauce, 1/2 cup ketchup, 1 teaspoon fine salt, and 1/2 teaspoon ground black pepper.

  4. Thoroughly blend the mixture with your hands, adding up to 1/2 cup more breadcrumbs if the mixture is too wet.

  5. Scoop the meat mixture into a 9x5x3-inch loaf pan, pressing down and smoothing the top.

  6. Bake for 30 minutes, then carefully remove the pan and pour off any excess fat.

  7. Spread the remaining 1/2 cup ketchup over the loaf, then return it to the oven.

  8. Bake for an additional 30 to 40 minutes, or until the internal temperature reaches 145 to 150 F.

  9. Remove the meatloaf and let it rest for 10 minutes before slicing.
