Instructions

  1. Preheat the oven to 400 F with a rack in the middle. In a large bowl, whisk eggs, milk, salt, pepper, and optional nutmeg until blended.

  2. Heat olive oil in a 10-inch oven-safe skillet over medium heat. Sauté shallot, asparagus, and ham for 4-6 minutes, until asparagus is bright green and shallots are translucent.

  3. Pour the egg mixture into the skillet and stir in 3/4 of the cheese. Top with sliced cherry tomatoes and the remaining cheese.

  4. Cook on the stovetop for 1 minute until the outer edge sets. Transfer to the oven and bake for 8-10 minutes, until puffed and set. Check doneness by making a small cut in the center; if liquid remains, bake for 1-2 more minutes.

  5. Cool for 5 minutes before loosening edges with a spatula or knife, then slice and serve, garnished with optional parsley.
