Instructions

  1. Heat 3/4 to 1-inch deep oil in a frying pan on high heat, testing readiness by dipping a wrapper corner; it should fry immediately.

  2. Prepare filling: either drain and cube tofu to 1 cup, or thaw and drain shrimp; combine with green onion, hoisin, and sugar.

  3. Lay out 6 wonton wrappers; moisten edges with 1/2 cup water.

  4. Place 3/4 teaspoon filling in the center of each wrapper.

  5. Fold wrappers into triangles and press edges to seal; optionally, bring the two outside corners together, overlap, and secure with water for an alternate shape.

  6. Fry wontons in hot oil, turning until light golden brown.

  7. Drain fried wontons on paper towels; repeat for all remaining wontons.

  8. Serve with your choice of Thai sweet chili or sweet and sour sauce.
