Easy Fried Grits Cakes
Fried grits cakes are a delightful dish made by cooking grits, chilling them until firm, then slicing and frying until golden.

Instructions

Start boiling water and salt in a large, heavy saucepan.

Add the grits and simmer, stirring constantly, for 15 to 20 minutes until cooked and thick; add more boiling water if too thick.

Pour the hot grits onto a large plate or baking sheet to create a 3/4-inch layer, cool, then refrigerate for 30 minutes to 1 hour to chill and firm.

Once firm, cut the grits into rounds with biscuit cutters or into rectangles with a knife.

Dredge each grits piece lightly in flour, shaking off any excess.

Heat about 1/2 inch of vegetable oil in a large, heavy skillet over medium-high heat.

Fry the grits cakes for approximately 2 1/2 minutes per side until golden brown.

Drain on paper towels, sprinkle with salt, and serve hot, optionally garnished with chives.
