Easy Fresh Fig Bread

A delightful quick bread recipe yields two loaves featuring mashed sweet figs, tangy buttermilk, and crunchy pecans.

Instructions

  1. Preheat oven to 350 F (180 C). Grease and flour two 9x5-inch loaf pans.

  2. Beat 3 eggs until frothy, then mix in 2 cups sugar.

  3. Incorporate 2 cups mashed figs and 3/4 cup vegetable oil on low speed.

  4. Sift together 3 cups flour, 1 1/2 teaspoons baking soda, 1 teaspoon salt, and 1/2 teaspoon cinnamon.

  5. Gradually add the dry mixture to the wet ingredients, alternating with 1/2 cup buttermilk, mixing until just blended.

  6. Fold in 1 cup chopped pecans.

  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
