Instructions

  1. Preheat the oven to 170 F if keeping pancakes warm.

  2. Whisk flour and baking powder in a large bowl.

  3. In another bowl, beat eggs, then stir in milk, sugar, salt, and vanilla until sugar dissolves.

  4. Combine wet and dry ingredients with a fork until just mixed, leaving some lumps; avoid overmixing (under 20 seconds).

  5. Let batter rest for 10-20 minutes.

  6. Preheat griddle to 375 F or a nonstick skillet over medium heat.

  7. Lightly spray the hot cooking surface with oil.

  8. Ladle 1/4 cup of batter per pancake onto the griddle.

  9. Cook for 1-2 minutes until bubbles appear, edges set, and bottoms are golden.

  10. Flip and cook for about 1 minute until browned and cooked through.

  11. Serve immediately or transfer to the warm oven; top as desired.
