Instructions

  1. Preheat the oven to 350 F and line two cookie sheets.

  2. Sift together flour, baking powder, and salt.

  3. Cream butter and sugar until fluffy, then beat in egg and vanilla.

  4. Gradually mix in the flour mixture until just combined.

  5. Cover and refrigerate the dough for 30 minutes to 2 hours.

  6. Scoop dough, roll into balls, and optionally coat in sugar or sprinkles.

  7. Place dough balls 2 inches apart on prepared sheets and flatten slightly.

  8. Bake for 8 to 11 minutes, rotating pans halfway, until light golden brown.

  9. Cool on baking sheets for a few minutes before transferring to a wire rack.
