Instructions

  1. Start boiling 10 cups of soup or stew.

  2. In a large bowl, sift together 2 cups all-purpose flour, 4 teaspoons baking powder, and 1 teaspoon fine salt.

  3. Add 1 cup milk and mix until combined into a thick batter, then let it rest briefly.

  4. Once the soup is boiling, drop spoonfuls of the batter into the pot, placing them on top of the existing solids.

  5. Reduce heat to a medium-low simmer, cover, and cook for 10 to 15 minutes without removing the lid.

  6. Check for doneness: dumplings should be doubled in size, and a toothpick inserted into the center should come out clean.

  7. Divide the dumplings into bowls and serve.
