Easy Dairy-Free Mango Custard

Instructions

Dice mango, reserving a few cubes for garnish; place 1 cup into a blender.

Add 2-3 tablespoons sugar to the blender and process until the mango is a smooth puree.

In a separate small bowl, combine 1/4 cup coconut milk with cornstarch and stir to dissolve.

Add the cornstarch mixture and egg yolks to the mango puree in the blender; blend for 10 seconds.

In a pot, heat the remaining 3/4 cup coconut milk over medium heat, stirring until it reaches a light boil.

Pour the hot coconut milk into the blender and immediately blend with the mango mixture for 5-10 seconds.

Return the entire mixture to the pot over medium-high heat. Stir continuously, reducing heat to medium as it thickens over 7-10 minutes. Taste and add more sugar if desired.

Pour the thickened custard into serving dishes and refrigerate until cold.

Garnish with reserved mango cubes and optional fresh mint before serving.
