Easy Dairy-Free Mango Custard

Instructions

  1. Dice mango, reserving a few cubes for garnish; place 1 cup into a blender.

  2. Add 2-3 tablespoons sugar to the blender and process until the mango is a smooth puree.

  3. In a separate small bowl, combine 1/4 cup coconut milk with cornstarch and stir to dissolve.

  4. Add the cornstarch mixture and egg yolks to the mango puree in the blender; blend for 10 seconds.

  5. In a pot, heat the remaining 3/4 cup coconut milk over medium heat, stirring until it reaches a light boil.

  6. Pour the hot coconut milk into the blender and immediately blend with the mango mixture for 5-10 seconds.

  7. Return the entire mixture to the pot over medium-high heat. Stir continuously, reducing heat to medium as it thickens over 7-10 minutes. Taste and add more sugar if desired.

  8. Pour the thickened custard into serving dishes and refrigerate until cold.

  9. Garnish with reserved mango cubes and optional fresh mint before serving.
